Spinach Cupcakes – Eggless Recipe (Infantil 4)

Ingredients:

  • 1 cup of whole-wheat flour
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of ginger powder
  • 1/8 teaspoon of salt
  • 1 cup of spinach
  • 1 banana
  • 1/2 cup of jaggery (or brown sugar)
  • 5 tablespoons of water
  • 1/2 cup of milk
  • 1/4 cup of coconut oil
  • 1 teaspoon of vanilla extract

Procedure:

  1. Preheat the oven to 180º and line muffin tin with paper cases.
  2. Whisk the flour, ginger powder, baking soda, baking powder and salt in a bowl.
  3. In a blender, beat the spinach, the banana and the milk.
  4. Melt the jaggery (or brown sugar) in the water on a low flame to make a syrup and then add the syrup to the mixture in blender.
  5. Add coconut oil and vanilla extract and mix it well.
  6. Pour the spinach mixture to the dry ingredients and mix gently.
  7. Pour the batter into the cups and bake it for 20 to 25 minutes.
