Spinach Cupcakes – Eggless Recipe (Infantil 4)

Ingredients:
- 1 cup of whole-wheat flour
- 1/2 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1/2 teaspoon of ginger powder
- 1/8 teaspoon of salt
- 1 cup of spinach
- 1 banana
- 1/2 cup of jaggery (or brown sugar)
- 5 tablespoons of water
- 1/2 cup of milk
- 1/4 cup of coconut oil
- 1 teaspoon of vanilla extract
Procedure:
- Preheat the oven to 180º and line muffin tin with paper cases.
- Whisk the flour, ginger powder, baking soda, baking powder and salt in a bowl.
- In a blender, beat the spinach, the banana and the milk.
- Melt the jaggery (or brown sugar) in the water on a low flame to make a syrup and then add the syrup to the mixture in blender.
- Add coconut oil and vanilla extract and mix it well.
- Pour the spinach mixture to the dry ingredients and mix gently.
- Pour the batter into the cups and bake it for 20 to 25 minutes.
